Here is another southern thing with a northern twist... will bring on the ol methane gas though so be ready...
1 pound dried red beans, rinsed and sorted over
1 pound of ground venison
3 tablespoons bacon grease
1 1/2 cups chopped yellow onions
3/4 cup chopped celery
3/4 cup chopped green bell peppers
1/2 teaspoon freshly ground black pepper
Pinch cayenne more if your like me and like it beer drinkin hot....
3 bay leaves
2 teaspoons fresh thyme
1/2 pound smoked sausage, split in half lengthwise and diced
3 tablespoons chopped garlic
10 cups chicken stock, or water
4 cups cooked white rice
Rinse your beans and soak overnite. brown meat in onion, garlic, pepper mixture. add the rest( besides rice) drain and rinse beans and add to pot. boil and down to simmer for a couple hours.. put it over the rice and enjoy with a beer...
If strong tasting venison zip it up by adding andouille sausage. Or you can always marinate the hamburger in some beef broth,catsup, and cajun seasoning to take the wild out.. This recipe is sometimes a little harsh for a northerner not used to cajun foods..
