I have a few non-roadkill (as they put it) eaters in the house so my challange is to make foods they cant tell the difference. You can make it with venison brat ect... or any sausage ya choose
Venison Italian Sausage recipe..
Make this with 5 pounds of lean Venison 5 pounds of fatty pork Or ground pork 5 tbsp kosher salt 1 tbsp cracked fennel seed 2 tsp course black pepper 1 tbsp sugar 3 tsp crushed hot pepper (more if you like) 1 tsp Italian seasoning, 1 tbsp coriander 2 1/2 cups ice water.
Grind your meat with the smallest holes for your grinder. mix all seasoning with ice water and pour over meat.. Let it stand for a while mixing several time. put stuffer funnel on grinder and start to feed into casings...
cook the prepared sausage just like you would a brat.. boiled and browned in your favorite beer.. slice diagonally in 1/4" slices..
Boil fettuccine noodles as directed.
In a pan sautee a diced onion until translucent and also add some garlic, Next add a can of italian diced tomato, and a can of chicken broth. a little more italian season and add meat and simmer for a few... now mix er up with the cooked fettuccine and ya got urself some good eat's
